Strawberry Bread

Ingredients:

3 Cups Fresh Strawberries

3 1/8 cups all purpose flour

2 cups white sugar

1 teaspoon ground cinnamon

1 teaspoon salt

1 teaspoon baking soda

1 1/4 cups vegetable oil

4 eggs, beaten

1 1/4 cups chopped pecans

Cooking Directions:

  1. Preheat oven to 350 degrees.  Butter and flour two 9 X 5 loaf pans
  2. Slice strawberries, and place in a medium bowl.  Sprinkle with sugar, and set aside.
  3. Combine flour, sugar, cinnamon, salt and baking soda in a large bowl.  Blend oil, eggs and strawberries together.  Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened.  Stir in pecans.  Divide batter into pans.
  4. Bake 45-50 minutes, or until toothpick inserted in middle comes out clean.  Let cool in pans on wire rack for 10 minutes.  Turn loaves out and cool completely.

Strawberry Cobbler

Ingredients:

4 Tablespoons butter

3/4 cup all purpose flour

3/4 cup sugar

1 teaspoon baking powder

1/4 tsp salt

3/4 cup milk

2 cups sliced FRESH FLORIDA STRAWBERRIES

1 TBSP Sugar

Cooking Directions:

  1. Heat oven to 350 degrees.  Place oven rack in upper-middle position.
  2. Place butter in an 8 inch square or 9 inch round baking pan; Place in oven to melt.  Remove pan from oven when butter has melted.
  3. In a small bowl, mix flour, 3/4 cup sugar, baking powder and salt.   Add milk and mix to form a smooth batter.  Pour batter into pan (over melted butter) , then scatter fruit over batter.  Sprinkle with remaining 1 TBSP of sugar.
  4. Bake 50 - 60 minutes, or until batter browns and firms and fruit is bubbly.  Serve warm with whipped cream or ice cream.
